Does somebody knows if theres a way to get a List of all registered Storewide
Eventsinks. And if there are some, how to delete some specific?

All store wide eventsinks are registered in the system Mailbox eg
file://./backofficestorage/ADMIN/%userdnsdomain%/MBX/SystemMailbox{GUID}/Storeevents/GlobalEvents

So you can use regevent.vbs which comes with the Exchange SDK to enum (and
delete) event sinks on this folder. All you need to do is work out the Guid
used for the system mailbox. There are a few ways to work the guid out, one
way is to use Active Directory Users and Computers (make sure you have
advanced features selected) and look in the "Microsoft Exchange System
Objects" OU and you should see all the system mailboxes for exchange servers
in your domain. All you need to do is find the one for the mailstore you
want to check (just look at the Exchange general tab) then grab the alias
name. You can also find out what it is by using Exchange System Manager and
looking at the mailbox list for the store.

Once you have this guid you can then use regevent.vbs like "cscript
regevent.vbs enum
file://./backofficestore/admin/yourdomain.com/systemMailbox{guid}/storeevents/GlobalEvents
all "

You can also use Exchange Explorer which comes with the Exchange SDK dev
Tools to do this by connecting to
http://servername/exchange/SystemMailbox{GUID} and then browse to the
storeevents/globalevents folder and look at the items in that folder
