We have documents that - no matter how many times we
format them as one language - still manages to load parts
of it as a different language. I'm not sure how to
describe it, I just know that solving it means choosing
Edit>Select All, going to Tools>Set Language, removing
the "Do not check spelling or grammar" check mark and
applying.

why do documents periodically seem to change this setting?

Hi Sean,

Documents that exhibit this behavior are probably damaged
forever. Word stores the *Windows* default language where
you can't get at it to change it and will bring it back up
every time you turn around. PITA!

Best thing you can probably do is
- make sure your Word and Windows language defaults are
the same
- create a new document
- copy/paste all but the last paragraph mark into the
new document
- recreate headers/footers, margins, etc. in the new
document
