Students of what (subject)? What purpose shall the documents you want to
have created serve?

A good starting point might be:

Creating a Template (Part II, by John McGhie)

the students are learning about the basics of computers.
What i would to show them would be tables and forms and the
basic simple things without complicating life too much.
thanks

There are a lot of good FAQ articles on forms, on templates, tables,
etc. at the MVP site. It's more about creating documents than a
repository of samples, but then again, you want to enable your students
to create, I presume.

I'd not show too much different stuff, beceause, as you say, you don't
want to complicate. Word, OTOH, lets you do a ton of different things,
in various way. It certainly lets you do many things in bad ways, too.
