CPU choices single, dual or quad core

CPU choices single, dual or quad core

I'm looking into some new hardware for live streams. All i'm doing is
taking analog feeds and streaming them. Nowadays, there are a lot of
choices for CPUs.
1) Single proc
2) Dual core
3) Dual Dual cores
4) Quad core
5) Dual Quad cores

Yikes! My guess (and only a guess) is that the best bang for my buck
will be the fastest multi core chip: Xeon 5160 (3.00 ghz) Dual Core.
I can't see WME getting a significant increase in perf using 8 cores
vs 2. There is already a 2nd core for multithreaded processes and the
3.0 ghz clock speed (vs the quad's 2.66 clock speed) should also help
out.

Anyone have any feelings about this?

Also, what about the os?
XP Pro 32 bit (tried and true)
XP Pro 64 bit (iffy)
Vista Business 32 or 64 (?????? no clue)

I'm using dual Xeon 5160 systems (4 CPUs), on Vista Ultimate 64.
Great encoding times, full cpu usage (400%), but there are issues that
don't appear in 32-bit mode with things like input codecs, so I have
some systems configured XP-32. You have to have Vista from MPEG2
decoding in 64-bit, for example...
