I am running out of space on my WMS machine and have abundant NAS available.
Is it possible to have WMS stream video files that reside on a NAS unit?
I've set up shares to some of the video files I have strored on the NAS
device, but I can't seem to find a way to to set up a publishing point to
those files that reside on a share of the NAS device.

Also what is the maximum number of publishing points that one WMS can have?

Read this for sourcing content from a remote share:

Basically it is using a UNC path to your content and making sure the
right security settings are in place.
If you make sure the user which runs the "Windows media server" can
access the files on the remote share you will be up and running in
minutes.

Not sure about the maximum number of publishing points per server.

Yes, you cannot access using a network drive but you can use UNC.
