IMAPd's are not involved in sending messages. However, many mail user
agents can be configured to store a copy of all sent messages to some
specified place (which can be an IMAP folder -- and then, if Cyrus
server is used, then Cyrus storage policies will be used as well, so
each message will end up as a separate file).
Note though that regular users do not have filesystem access to the
message store: at filesystem level the messages can only be accessed
by the user account designated for the Cyrus server - so in most
cases the storage format isn't a concern (as long as performance is
