Is there a method to set the colors on messages in the index
page if a header line exists?

To be more specific, something like this:
color index red default ~h 'Organization: something'

I'm using mutt 1.5.6i (2004-02-01)

Ah, the fabulous world of single and double quotes!
Never tried the "encapsulation"

Would this method work to colorize a _subdirectory_ where the name of
the subdir contained the string '.sbd' ?

This is the way Thunderbird names subdirectories and I'd like to be
able to use Mutt instead.
