Apparently, imread can read 32-bit floating-point TIFF, but can't
write them. In fact, I don't see how Matlab could be made to export a
floating-point raster in any image format. I'm particularly interested
in TIFF and JPEG200 32-bit floating-point images because they can be
then imported into ArcMAP. Please, am I missing anything or does
anyone know of any toolbox to do what I want? Thanks.

You could use arcgridwrite (in file exchange) and then import it into armap. This works for me.
