I have installed a new Exchange Server and moved all mailboxes, but
now I need to remove the old server that is stil visible in the
Exchange Management Console. The old server is already physically
offline and will not come online any more.
Can someone please give a hint, thanks

I found the solution:
Use adsiedit.msc (In Support Tools)
Configuration\Services\Microsoft Exchange\Organization Name
\Administrative
Groups\Your Administrative Group\Servers
Click on the server and hit delete.
